DANA DOWNS
Dana Downs is a nationally recognized hospitality consultant, restaurateur, and executive chef with more than 32 years of leadership experience in the restaurant and private club industries. She is the founder of CASA Hospitality, a consulting firm that advises restaurants, hospitality groups, and private clubs on concept development, culinary strategy, operational systems, and brand positioning.
Downs built her reputation as the founder of Roost Modern Italian, one of Dayton’s most celebrated restaurants, which she owned and operated for more than 14 years. Throughout her career she has launched multiple successful hospitality ventures, led teams of over 100 employees, and developed innovative dining programs generating millions in annual revenue.
Her background spans restaurant ownership, executive culinary leadership, country club management, membership programming, and hospitality brand development. Downs has worked with hospitality operators to refine menus, improve operational efficiency, design new restaurant concepts, and create memorable guest experiences.
